What is Wheat ?

Wheat: Wheat is a grass widely cultivated for its seed, a cereal grain which is a worldwide staple food. The many species of wheat together make up the genus Triticum; the most widely grown is common wheat. The archaeological record suggests that wheat was first cultivated in the regions of the Fertile Crescent around 9600 BCE. Botanically, the wheat kernel is a type of fruit called a caryopsis.

Wheat Definition  

         The Kernel of wheat sometime called the wheat berry, the kernel is the seed from which the wheat plant grows. Each tiny seeds contains three distinct parts that are separated during the milling process to produce flour. The wheat grain consists of three main parts: the endosperm, the bran, which is mostly wall tissue and the wheat's germ.

1- The Endosperm: The endosperm comprises about 80-85% of the kernel weight    and is the source of white flour. The endosperm contains great share of the protein, carbohydrates and iron, as well as the major B-Vitamins such as riboflavin, niacin and thiamine. It is also a source of soluble fiber.


2-The Bran: Bran makes up about 12-14% of the kernel weight. Bran is include in whole wheat flour and can also be bought separately. The bran contains a small items of protein, large quantity of the three major B-Vitamins, trace minerals and dietary fiber.


3-The Germ: Germ is about 2-3% of the kernel weight the germ is the embryo or sprouting section of the seed, often separated from the flour in milling because the fat content (10%) limits flours shelf life. The germs contain minimal quantities of the high quality protein and a greater share of the B-complex vitamins and trace minerals. Wheat germs can be purchase separately and is part of whole wheat flour.
